What Gujia Is

Gujia, also known as Purkiya in some regions, is a beloved traditional Indian sweet. Though it’s known by different names across the country, its emotional value remains the same. Gujia is more than just a sweet — it’s a celebration of culture and emotion, especially enjoyed during festivals like Holi, Diwali, and other joyful occasions.

At our place, we prepare each Gujia entirely by hand, ensuring natural quality and an extraordinary homemade taste. The outer layer is delightfully crispy and crunchy, with a beautiful light yellow color that hints at the rich flavor inside. Its fragrance is so inviting, it effortlessly finds its way to the senses — a true mark of its impeccable charm.

But the real magic lies within. The inner stuffing — a delicious blend of traditional ingredients — takes Gujia to an unmatched level of indulgence.

How its made with ♥️

Here too, maida (refined wheat flour) is the primary ingredient. First, we begin by preparing the outer layer of the Gujia. We add our desi ghee to the flour, mix and knead it thoroughly, and then pour in lukewarm water to form a firm dough — it should not be too soft. Once done, we let the dough rest for about 20 minutes.

Meanwhile, we prepare the magical stuffing — the heart of every Gujia. Stuffing: Light up the stove and heat a pan, then add a generous spoon of ghee and stir well. Add sooji (semolina) and roast it gently on a low flame until it turns a beautiful golden brown — and yes, that smell… ahhh, simply divine!

Next, add powdered sugar, followed by a rich mix of dry fruits — cashews, raisins, almonds, and finely chopped dry coconut. To finish it off, sprinkle some elaichi (cardamom) powder for that aromatic kick.

Mix it all well — and your fragrant, flavorful stuffing is ready.

Now return to your rested dough. Roll it into small circles, like pooris, and place them on a gujia mold (called sancha in Hindi).

Spoon in the miraculous stuffing, close the mold, and press firmly to get the perfect traditional shape.

Finally, deep fry the Gujia in pure A2 desi ghee over a gentle flame until it turns crisp and golden.
